Like every mom out there, I am always rushing in the morning… especially on weekdays! I am always the last one to eat breakfast, so I love this overnight oatmeal recipe! I can mix it up the night before, pop it in the fridge, and it’s ready to go in the morning! Oh, and I prefer the steel cut oats… but totally personal preference!
1/2 – cup steel cut oats or old fashioned oats
1/2 – cup vanilla or plain almond milk, soy, coconut or regular milk
1 1/4 – cups vanilla yogurt
1 – tablespoon ground flax seed or chia seeds
1 tsp vanilla
Makes 3 servings! Mix all ingredients together in a glass or jar. I prefer canning jars, but if you are using a glass then you should put saran wrap over the top to prevent moisture from getting in! Put in fridge overnight. In the morning, add your favorite toppings. I have listed my favorites below!
