Banana Bread

My middle son LOVES Banana Bread, so whenever we have some over ripe bananas I try to make this recipe for him! He loves it!! It’s also a great Fall comfort food!!

Ingredients

2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

2 eggs

1 cup sugar

1 teaspoon vanilla

1/2 cup vegetable oil

1 teaspoon cinnamon

4 very ripe bananas

Directions

Preheat the oven to 350 degrees F. In a medium bowl, combine the flour, baking soda, baking powder and salt. In a large bowl, cream together the eggs, sugar, vanilla, oil and cinnamon. Also, add two mashed bananas. Gradually add in the flour mixture, a third at a time, until just combined. Cut up the remaining two bananas and stir in, being careful to not break up the chunks too much.

Pour the batter into a 9-by-5-inch loaf pan.

Bake for about 1 hour. * Note* Baking time will vary depending on oven and pan. For instance, my bread took 1 hour and 20 minutes since the pan was smaller, resulting in a thicker bread. Insert a bread knife into center of bread, and when it comes out clean, the banana bread is ready!

Girls Night…

I love a good girls night… A night to catch up, have some cocktails, some laughs and enjoy some time with good friends! I also love the planning that goes into these “events”. I think I missed my calling as an event planner, so I get to play party planner when I put these nights together!

When I throw parties I always like to have something unexpected for my guests. I just think its so fun! For holiday parties I have hired Christmas Carolers and Caricature Artists to draw self portraits! For one of my girls nights I offered mini reflexology sessions, which the girls really loved. You could also follow the same theme with a message therapist (think shopping mall massage chair)!

And if you want to keep it more simple, think of a theme… Like maybe have a dessert party or a cookie swap! Either way, keep it pretty! I put fresh flowers all over the house, lay out pretty napkins and set up a nice bar for my guests.

The last girl’s night I hosted, I ordered these amazing “adult” cake pops for all my girls to try! I arranged them on a cupcake tower and they were delicious! The cocktail cake pops come in three flavors: Pink Champagne, Strawberry Margarita, and Mimosa! Tip: order ahead to account for shipping time and make sure to order extra because they go fast!
